You heard me.
A party. in. your. MOUTH.
Chocolate, chocolate chip with a dash of brown sugar, pure cocoa, marshmallows and walnuts.
That just happened.
Well, on Sunday night it happened. haha
It went something like this…
We (meaning me) needed some chocolate something fierce, and since I’ve been refraining from buying anything good (ie: junky and delicious) from the market, I was reduced to making something to satisfy my craving. So I got to baking.
As with my DIY style, where I like it cheap and easy… I like it equally fast, and easy when it comes to cooking.
Here is my “cheater” Party In Your Mouth Rocky Road Cookie Recipe:
Are you ready?
- 1 store bought chocolate cake mix. I used a Milk Chocolate mix.
- 2 eggs
- 1/2 cup cooking oil. I used Canola.
I doctored it up. Cause it was sick.
- 1 heaping tablespoon Brown Sugar
- 1 heaping tablespoon Pure Cocoa Powder
- 1/2 to 1 cup milk chocolate morsels. I do a 1/2 cup, don’t like to over CC my cookies. (shocker right?)
- 1 cup mini marshmallows.
- 1 cup Walnuts. I like mine big and chunky, you can chop if you like.
Mix ingredients in the order listed.
Preheat over to 350* and bake for 8-12 minutes depending on your oven, and how crispy you like your cookies.
Make about 18-24 cookies depending on how large you want them.
I mixed my marshmallows well into the cookie dough… which made for some bubbly goodness when they oozed out and got crispy and chewy around the edges.
I highly recommend this. Actually, the more disfigured with gooey bits, the better they tasted!
I’m no fancy-pants baker.. but I’m a pretty good cake mix manipulator.
Give it a try if your not a kitchen ninja!
Ya might surprise yourself.
All hail the cheater cookie.
The late night snack answer to your prayers.
